Roasted Beet, Bacon, Apple + Brussels Bowl

This bowl has become a staple in our house and I think it is going to become one in yours too. Roasted beets, caramelized brussels sprouts, sweet apple and crispy bacon all tossed together and finished with a light raw honey drizzle. The whole family actually eats it and every single ingredient is working hard for your child's skin and gut.

What you need
- 3 medium beets peeled and cubed
- 4 cups brussels sprouts halved
- 2 apples cored and cubed
- 6 strips thick cut bacon
- 3 tbsp olive oil or avocado oil for roasting
- 1 tsp sea salt
- 1 tbsp raw honey drizzle at the end
How to make it
Preheat your oven to 400F and line a baking sheet with parchment paper.
Toss the beets, brussels sprouts and apple together with the oil and sea salt. Spread onto your baking sheet and roast for 25 to 30 minutes until tender and golden, flipping halfway through.
Cook the bacon in a skillet over medium heat until crispy. Drain on a paper towel then chop or crumble into pieces.
Tip the roasted vegetables into a bowl, add the bacon and toss everything together. Drizzle raw honey lightly over the top and serve warm.
A few tips before you start
Wear gloves when peeling and cubing beets. They will stain your hands for days and you have been warned.
This is a great meal prep recipe. Roast everything ahead and store separately in the fridge. Assemble and add the honey drizzle fresh when you are ready to eat.
Less is more with the honey. A light drizzle is all you need to tie everything together beautifully.
Look for pasture raised bacon when you can. The quality of the fat matters and your family's skin will thank you.
